How to Make Spanish Chorizo in Red Wine Tapas Recipe

Chopped onions and slices of chorizo in a black frying pan.

Start by heating a tablespoon of olive oil in a nonstick pan over medium heat. Add the chopped onion and fry for a couple of minutes, until translucent and fragrant. Then, add the chorizo to the pan and fry for about 5 minutes, turning occasionally to ensure even cooking.

Next, add the minced garlic and mix well with the chorizo, cooking for another minute to release the garlic’s aroma. Pour the red wine into the pan and reduce the heat to low. Add the bay leaf for an earthy touch to the sauce.

Let the mixture simmer gently for about 20 minutes, or until the wine reduces and forms a thicker sauce. Remove the pan from the heat and transfer the chorizo and sauce to a tapas dish. Sprinkle generously with chopped parsley for a fresh and colourful touch. Serve the chorizo in red wine hot, accompanied by crusty bread for dipping into the delicious sauce.

Notes and Tips

  • Make sure to buy fresh chorizo sausages and not cured ones that don’t need cooking. They are uncooked sausages that have quite a red colour due to the paprika added to the meat. They are perfect for infusing with the red wine sauce.
  • The red wine reduces during cooking to create a thick and flavourful sauce. If you prefer a thinner sauce, you can add a bit more wine or even some chicken broth if you prefer.
  • Fresh parsley adds a touch of freshness to the dish, but you can also experiment with other fresh herbs based on your own taste.

FAQ:

Q: Can I use any type of chorizo for this recipe?

A: It is recommended to use fresh chorizo sausage. The snacking chorizo, which you can find in the non-refrigerated section at your supermarket is already cooked and it won’t absorb the sauce. Also, it will dry significantly in pan so it’s not a good choice.

Q: What kind of red wine should I use?

A: While any dry red wine will work, I usually use Tempranillo because it’s a very affordable young wine, a step up from the classic cooking wine.

Q: What can I serve with chorizo in red wine?

A: This dish pairs wonderfully with crusty bread for dipping into the flavourful sauce. You can also serve it alongside other Spanish tapas such as olives, cheese, or patatas bravas.
