How to Make Menorcan Stuffed Eggplant Recipe

Start by slicing the eggplant lengthwise and boiling it in salted water for about 10 minutes, until the inside softens. Remove it from the water and let it cool slightly, then carefully scoop out the flesh without breaking the skin. Place the pulp in a colander and leave it to drain for about an hour to remove excess moisture and any bitterness.

Meanwhile, finely chop the onion and pepper and sauté them in a pan with olive oil until soft. Add the chopped tomatoes and garlic and cook until fragrant. Stir in the drained eggplant flesh and cook everything together until tender and well combined.

Transfer the mixture to a bowl and mix in most of the breadcrumbs until you get a soft paste-like filling. Preheat the oven to 180°C.
